Fantastic, Healthy Chocolate balls
I prefer having a healthy desert on hand at parties, but a funny happened with these delectable darlings, everyone loves them. Now I cannot show up without them. These are loaded with healthy fats and sugars. The fat slows the sugars absorption, which means less of a sugar spike.
Recipe
1 cup walnuts
1/3 cup macadamia nuts
1/4 cup dates
1/4 cup cacao powder (you can use carob powder to avoid the caffeine of cacao, but does not taste near as good)
1/3 cup dried cherries
1/3 cup raisins
Throw everything in the food processor and turn on high till it clumps and almost starts to shine from the oil. If you’re not sure they are done, keep processing. Put in a handful of walnuts at the end for a few seconds and pulse the food processor. Then start rolling your balls. This recipe makes about 12 to 15 balls.
*For a special event, I buy freeze dried cherries, smash them up with a hammer in a towel, put them in a bowel and roll the balls in it. This gives them a colorful Holiday vibe. In the photo I posted, I rolled them in walnut crumbs. Walnut crumbs are what’s left at the bottom of the walnut jar when I run out of walnuts. I always save the crumbs for my next batch of balls, unless it’s the Holidays and then I go with the dried cherries.
